Pesto chicken pasta

This is the EASIEST meal. Hands down.

First cut a pack of chicken breast into cubes.

Brown those cubes in 1 tablespoon of olive oil. Once the chicken is brown add in some minced garlic. We like garlic so I use two cloves, more if they’re smaller. Once the garlic is browned, takes about a minute add in about 1/2 cup of heavy whipping cream and shredded Parmesan cheese. Stir constantly to melt the cheese and prevent it from sticking. Now add in the pesto I use a 6.25 oz jar. Judge on the consistentcy you prefer, you may need to mix in a tad more heavy cream. You’re done. Just stir all that together for a minute to get all the flavors together and then mix in some cooked noodles of your choice. I usually do penne.

Oven roast tomatoes (optional) to top. Olive oil, salt and pepper in a 375°F/190°C oven until they’re how you like them. I like to leave mine in for about 5 minutes. Also optional top with more shredded Parmesan.

I’m sorry guys I SUCK at measuring as I cook. 😂 I just eye ball everything and taste as I go to make sure it’s all good.
